Two Dublin restaurants were among those awarded two Michelin stars, as Irish cooking continues to win praise.

Ireland has two new two-Michelin-starred restaurants, as the 2022 Michelin Guide Great Britain and Ireland has been announced.

They join the two new one-Michelin-starred restaurants, as well as the 14 in Ireland and three in Northern Ireland who have retained their stars for another year.

Dublin's Chapter One by Mickael Viljanen, the iconic city centre restaurant that was recently revamped by the Finnish head chef, was awarded two Michelin stars, a highly anticipated recognition of Viljanen's boundary-pushing cooking and clear-cut take on haute cuisine that comes just six months after the restaurant's opening.

Located on Dublin's Parnell Square, Chapter One under Ross Lewis had long been a beacon for food lovers, but when Viljanen moved from The Greenhouse on Dawson St, it signalled a significant shift. Nestled beneath the Dublin Writers Museum, the basement restaurant serves up plates as inventive as the art on its sophisticated walls.

The Guide praised the team for its "classical French techniques combined with a subtle modernity as well as plenty of creativity and personality", with dishes that are "perfectly balanced, with striking natural flavours".

Located in Blackrock, Liath is the other new two-Michelin-starred spot in our city, a restaurant that had practically reached celebrity before it opened its doors.

Headed up by chef Damien Grey – who ran famed Heron and Grey with Andrew Heron – it's a small and intimate space. "When entering via the rustic market you'll feel like Alice in Wonderland, as the place has a cosy, magical feel", the Guide writes.

With an early evening sitting of three courses, called the 'Preview', and a later sitting with the full surprise tasting menu, each visit is a guaranteed delight.

As the Guide notes: "Bold, original dishes are centred around the five tastes – salty, savoury, sweet, bitter and sour – which come together in perfect harmony, and excellent wine pairings further enhance the experience."

Bastible on Dublin's South Circular Road was tipped for a Michelin star, so it's thrilling to see it finally achieve that goal. Named for the traditional pot that was a sight on the hearth in most Irish homes, this restaurant is dedicated to simple flavours and ideas executed flawlessly.

Although named for a traditional cooking method – they still use the bastible in the restaurant to make their bread – dishes here are modern and innovative, with the set menu featuring "top class Irish ingredients at the height of season and each main ingredient is given the space to shine", according to the Guide.

"Dishes are stripped-back, flavours are bold, and servings are generous: this is cooking that comes from the heart. Start with an aperitif while you enjoy the delicate snacks – and look forward to dessert, which is always a highlight."

Overlooking St. Stephen's Green in the beating heart of Dublin city, Glover's Alley is the last Michelin star-recipient this year. Located in the Fitzwilliam Hotel, the restaurant was named for the city's glove-makers who once operated out of the neighbouring alley.

The grand and chic dining room is vaguely inspired by 1930s decadence, setting the scene for a memorable meal, with pink and green shades and bouquets of stunning flowers completing the scene.

However, according to the Guide, "In contrast to the surroundings, Andy McFadden’s cooking is characterised by boldness – both in its flavours and textures – and his experience shines through in creative, modern dishes which are skilfully prepared and artfully presented.

"Dishes arrive at a smooth pace, brought to the table by a team who are detailed in their approach but refreshingly lacking in pomposity."

Speaking about the win, McFadden said: "It is a very proud day for the restaurant and for all the team. The tireless work by both the front of house and kitchen team has been an honour to be part of.

"As this exciting new chapter begins, I am looking forward to nurturing the young talent in our team and continuing to challenge and push ourselves. We are all over the moon."
